Special Mamon

Local sponge bread in the Philippines. Kids favorite because of its softness and its oh so yummy. :) We have tried this at school but sad to say, I didn't got a photo of it. My cam don't exist yet, I just got my cam last year. :P

By the way, here's a student-friendly recipe of Special Mamon. :)

Prepare:
3 cups cake flour
2 tbsp baking powder
1 cup sugar
1 cup water
7 egg yolks
1/2 cup melted butter
separated eggwhites
1 teaspoon cream of tartar

Here's How:
Sift flour and baking powder and sugar together. Make a well then add water and egg yolks. In a seperate mixing bowl, beat egg whites and cream of tartar, add 1 cup sugar gradually, beat until soft peak (you may use an electric mixer). Cut and fold the whites to the flour mixture with the butter. Depoit in mamon pans and bake for 20-25 minutes at 350F.
