Here's How:

1lb boneless, skinless chicken breast or thighs
For marinade: 1 cup curry powder
1 clove garlic, finely chopped
2 tbsp each soy sauce and lemon juice
1 tbsp sugar
For peanut sauce: 3 tbsp smooth peanut butter
2 tbsp each liquid honey, soy sauce, water
Tabasco sauce to taste
Cut chicken into 1/4 inch strips and place in shallow dish. Combine marinade ingredients and pour over chicken, cover and let marinate in refrigerator for 10-60 minutes.
Place sauce ingredients in food processor and process until smooth. If sauce separates, stir in 1 tbsp boiling water.
Thread chicken strips onto skewers. Cook on preheated, oiled barbecue rack over medium heat for 5 minutes each side, or until cooked. Serve skewers with a drizzle of peanut sauce for dipping.
Serves 4-6.
