1 1/3 cups egg whites
1 1/3 tsp cream of tartar
1/4 teaspoon salt
1 cup white sugar
1 1/4 teaspoon almond extract or vanilla
1 cup sifted cake flour sifted twice with 1/2 cup sugar
Preheat oven to 300F. Beat egg whites with cream of tartar to soft peak stage. Gradually add sugar gently beating after each addition. Fold in the almond extract or vanilla. Gradually fold in sifted mixture of flour and sugar. Deposit in a tube pan and bake at 325F. When done cool the pan upside down.
