Lemon Squares Recipe

1 1/2 cups ultimate cookie mix (click to see the recipe)
3/4 cup sugar
2 teaspoons grated lemon peel*
2 tablespoons lemon juice*
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
Powdered sugar
Here's How:
Heat oven to 350. Press ultimate cookie mix in bottom of ungreased square pan 8x8x2 inches. Bake 15 minutes until set but not brown. Beat remaining ingredients on high speed about 3 minutes or until light and fluffy. Pour over baked layer. Bake about 25 minutes or until no indentation remains when touched lightly in center,cool. Sprinkle with powdered sugar. Cut into 2 inch squares. Can make 16 squares.
*To increase the amount of lemon juice you will get from a lemon, roll it firmly back and forth ten times on a hard surface. Grate the lemon peel before you cut the lemon to squeeze out the juice.
