Karekare Recipe


When did I last posted a Filipino Cuisine? I really can't remember. Hehe, But for now, here's our version of Karekare (a stew made of mixed vegetables and ox tail)

Prepare:
1 1/2 kilo ox tail
1 tablespoon atsuete seed/annato soak in 1/2 water and mash later to get its color
1 pc banana heart cut 1 inch thick
2 pcs eggplant cut 2inch thick
6 pcs string beans
1 cup peanut butter
4 cloves garlic
1 onion
1 head petchay/cabbage
1/2 cup sauteed shrimp fry paste
Salt to taste


Here's how:
Blanch the ox tail twice to rem0ve the stinky odor. Cut the ox tail into serving pieces and boil until done. Set aside. In a wok, saute the garlic, onions and then the banana heart. Cover for 3 minutes and add the string beans and eggplant. Add 4 cups of beef broth, atsuete broth, peanut mixture, salt, petchay and beef. Eat with sauted shrimp fry paste or alamang.
