Very Delectable Chocolate Pudding Recipe

Enjoying my posts? Hehe! Well, sad to say, chocolate recipes are for this week only. But don't you worry! ^_^ I will just give way to other dishes, ok? ^_^ Chocolate, chocolate, chocolate! ^_^

Prepare:

For the PUDDING:
2 1/4 cups milk
2 oz semi sweet chocolate, finely chopped
1/2 cup sugar*
2 tablespoon cornstarch
1/4 cup unsweetened cocoa
2 eggs
2 tablespoons margarine or butter
1 teaspoon vanilla

For the TOPPING:
1/2 cup whipping cream
2 tablespoons powdered sugar
1 chocolate-covered peanut butter candy bar, chopped

Here's How:
In medium heavy sauce pan, bring milk to a boil. Remove from heat; stir in semi-sweet chocolate. Set aside. In a small bowl, combine sugar, cornstarch and cocoa; mix well. Whisk chocolate milk until all chocolate is melted; add cocoa mixture, whisking until blended.** Bring to a boil over medium heat; simmer for 1 minute. Remove from heat...

In a small bowl, whisk eggs; slowly whisk about 1 cup chocolate mixture. Add egg mixture to saucepan and cook over medium heat until it thickens and just begins to boil, whisking constantly. Remove from heat; whisk in margarine and vanilla. Place waxed paper or plastic wrap over surface of pudding. Cool slightly. Refrigerate until cold.

In a small bowl, beat whiping cream and powdered sugar until stiff peaks form. Fold in half of candy pieces.

Note:
* For sweeter pudding, increase sugar to 2/3 cups

**To make pudding to this point using a food processor, cut up semi-sweet chocolate. In food processor bowl with metal blade, process semi-sweet chocolate and 1/4 cup of the sugar until chocolate is minced. With processor running, feed hot milk trough feed tube. Process until chocolate is melted; pour chocolate milk back into sauce pan. Whisk in cocoa mixture made with remaining 1/4 cup of the sugar. Continue as directed. Phew! A little bit hard! :p Anyhow, its worth it! ^_^
