Corn Relish

Confused on what to serve with Ham for dinner? Worry no more! Here's a perfect side dish to be served. :D

4 ears fresh corn
1/2 cup water
2 tablespoons chopped green bell pepper
1 tablespoon finely chopped onion
1 jar diced pimientos, drained
1/2 cup sugar
1/2 cup cider or white vinegar
1/2 teaspoon celery seed
1/4 teaspoon salt
1/4 teaspoon mustard seed
1/4 teaspoon red pepper sauce

Here's How:
Cut enough kernels from corn to measure 2 cups. Heat water to boiling in 1 1/2 quart saucepan; add corn. Heat to boiling; reduce heat. Cover and cook over medium heat 9 to 10 minutes or until corn is tender, drain. Mix corn, bell pepper, onion and pimientos in medium heatproof glass or plastic bowl. Heat sugar, vinegar, celery seed, salt, mustard seed and papper sauce to boiling; boil 2 minutes. Pour over corn mixture. Cover and refrigerate at least 4 hours but no longer than 5 days.
