CUSTARD CAKE WITH MACAPUNO

Lately, I remember I have a lot of cook books here in my room. Bakery Science caught my attention :). Here's one of the cakes we have made when I'm taking this course last semester. It was called "CUSTARD CAKE WITH MACAPUNO"..

Prepare:

*CARAMEL

1 cup white sugar
1 cup sweetened macapuno
*CUSTARD
1 big evaporated milk
8 egg yolks
1 can condensed milk
*CAKE
3 1/4 cup cake flour
1 tbsp baking powder
1/4 tsp salt
3/4 cup white sugar
1/2 cup oil
6 egg yolks
3/4 cup water
3/4 cups white sugar again
1/2 tsp cream of tartar
1 1/4 cups egg whites

First, preheat the oven up to 325 degree F. Caramelize the sugar (*CARAMEL) in two 9" square pans. Arrange sweetened macapuno over it then set aside. Combine ingredients for custard in a bowl and stir to blend. Divide the mixture into two then pour into pans with macapuno while passing through a strainer. Set aside.
Sift the flour, baking powder salt and sugar together. Make a well at the center then add the oil, egg yolks and water. Mix with a wire whisk until smooth. In a separate bowl, beat egg whites and cream of tartar until soft peaks form. Add sugar gradually and continue beating until stiff. Fold into egg yolk mixture and divide the batter into 2 then pour over the prepared pan with custard. Don't stir. Place each baking pan in a large utility tray half-filled with water. Bake for about 1 hour or until done. Invert in a serving platter.
