Pineapple Trade Wind

Pina colada flavors continue to be popular. Pineapple sherbet provides the frosty refreshment in this tropical drink.

2 cups pineapple sherbet, softened
1/3 cups crushed pineapple in its own juice, drained
1/4 cup rum
1/4 cup canned cream of coconut
2 teaspoons lime juice
2 cups crushed ice
1/4 cup toasted coconut if desired.

Here's How:
In blender container, combine all ingredients except toasted coconut, blend until slush consistency. Pour into champagne or wine glasses. Garnish each serving with toasted coconut. Serve immediately.
