Roasted Tenderloin with Orange Glaze
Here is a spicy twist on traditional pork roast, sure to enliven a springtime meal. When paired with roasted yams and red onions, it makes a satisfying feast.
Prepare:
One 4-5 pound center cut pork loin
Salt and freshly ground black pepper
Glaze:
2 tbsp chili powder
1 tbsp ground cumin
1 tbsp ground coriander
1/2 tbsp ground cinnamon
Juice of 2 oranges
1/2 cup cider vinegar
2 tbsp finely chopped serrano or poblano chile
1 cup sugar
1/4 cup molasses
