Roasted yams and red onions
Prepare:
6 yams, peeled and cut into 1/2 inch dice
4 red onions, peeled and quartered=0A2 or 3 tbsp olive oil
Salt and freshly ground black pepper to taste
Here's How:
Preheat the oven to 350 f. Arrange the yams and onions in an aluminum foil lined roasting pan and sprinkle with olive oil, shaking the pan to coat them evenly. Season to taste with salt and pepper. Roast for 1 1/2 hours, stirring occasionally, until very tender.
